Spanish Broken Eggs (Huevos Rotos) With Jamon Serrano

Looking for an extremely simple dish that actually tastes great? This is it! 🙂

Seriously, when I first had a chance to try Huevos Rotos during a trip to Barcelona back in 1988 I was like… eggs, fries and ham? How can that be any special? But as soon as I had the first bite, I got hooked. The savory and intense flavor of the ham, homemade fries and the runny yolk on top of it… pure goodness!

Ingredients:

This dish is literally kid-level-easy and you will need just 3 ingredients.

2-3 potatoes
2 eggs
2-3oz
(50-80g) Jamon Serrano

And a bit of salt to season the eggs with.

First, the fries:

Slice the potatoes into strips, leave the skin on. I went for a pretty fine cut, but you don’t have to. Huevos Rotos are often served with pretty thick fries or even wedges. Whatever you prefer, go with that.

Rinse the potatoes with water, then pat try them. Fry in vegetable oil.

Note: The authentic recipe suggests to fry the potatoes in olive oil, but somehow I don’t like to use olive oil for frying so I went with sunflower oil.

Next: Slice or Tear the Ham and Make the Poached Eggs :

While the potatoes are frying, cut your Jamon Serrano into smaller chunks or just tear the slices by hand.

Start to make the poached eggs, so they are ready when the fries are done.

I’m using the whirlpool method:

1. Bring water to a boil in a pot or deep pan.
2. Add a tablespoon or two of vinegar and stir/mix the water to create a whirlpool.
3. Crack the egg into a small bowl, then carefully drop it into the center of the whirlpool.
4. Cook for 3-4 minutes, 5 if the eggs are really big.
5. The key is to cook the egg white so it sets, but keep the yolk runny.

Now, the fries are ready :

nce the fries are done, transfer them to a large bowl. Add salt and about half of the Serrano chunks. Give it a proper mix.

Why this step? The fries are still very hot so when you add the Serrano pieces, the fat will start to melt and release the amazing flavor.

Now, it’s time to serve :

nd we are done, it’s time to serve.

Transfer the fries to a plate, add the rest of the Serrano ham and place the poached eggs on top. Garnish with some chopped chives.

Break the eggs and let the yolk run down the fries.

And now it’s time to eat 🙂
