How to Zest…

If you don’t know what zest is or how to go about zesting, this is your lucky day.  Zest is grated from the colorful skin of citrus fruits (lemons, limes, oranges, grapefruits).  To get zest, use a “zester” tool found in any kitchen supply store or you can use the smallest side of a box grater.  A zester will be much easier to use and can also shave chocolate and cheese.

Before you cut your citrus fruit, drag it lengthwise down the zester or grater lightly until the white shows through.  Don’t grate any of the white “pith” because it is bitter. Rotate the citrus slightly and repeat until all the colored skin is zested off.

Now you can use the citrus any way you please or store it in the fridge for later.  The zest can be used to add a fresh zing to dressings, cheese fillings, desserts or as a garnish.  Any dish that calls for citrus could benefit from some zest so happy zesting…
